Makes 6 Servings

For the Filling
2-3 lbs apples, peeled cored and diced

Zest of ½ orange

Juice of ½ orange

Zest of ½ lemon

Juice of ½ lemon

¼ cup sugar – this is dependent on how sweet the apples are, so more or less may be necessary

2 tb flour

For the Crust Topping
½ cup all purpose flour

½ cup granulated sugar

½ cup light brown sugar

½ tspn salt

1 stick unsalted butter, diced

This year was a very good year for our apple trees. Naturally, we have been incorporating them into our every day dishes. The type of apple is really not consequential. It all depends on taste and preference. The key is to get a sort that will hold its shape. I love Golden Delicious and I will often mix them with other varieties. This is a very easy dessert. The recipe calls for 6 ramekins to make individual desserts, but feel free to do the same in an 8”X8” baking dish.

INSTRUCTIONS

Preheat oven to 350°F.

Butter 6 ramekins or 1 8”X8” baking dish.

Combine apples, zest, orange and lemon juices, ¼ cup sugar and 2 tablespoons flour. Distribute the mixture evenly among the ramekins.

For the topping, in a food processor with a steel blade, combine flour, sugars, salt and butter. Pulse until butter is about the size of peas. You should have a very crumbly texture. Put topping on top of the apples and place ramekins on a baking pan.

Bake on the middle rack in the oven at 350°F for 1 hour. Serve at room temperature.

NOTE: This recipe may be prepared a day or two in advance. Simply prep the ramekins, cover with plastic wrap and freeze until desired usage.
