INGREDIENTS

Makes 3-4 Servings

2 large filets of cod – each filet cut into 3 pieces

2 extra large eggs

2 tb all purpose flour

1 tb olive oil

Salt

Pepper

INSTRUCTIONS

Prep time: 5 minutes  |  Cook time: 6-7 minutes

In a medium bowl add ½ tspn salt and ¼ tspn pepper to the eggs and using a fork whip up until well mixed together. In a second bowl add 2 tablespoons of all purpose flour, ¼ tspn salt and mix together.

In a 12 inch non-stick skillet, heat up 1 tablespoon of olive oil. Once the skillet is ready, dip one piece of the cod into the egg mixture then dip it directly into the flour. Shake off any excess flour and sauté for 3 minutes on one side. Continue with the rest of the pieces adding all of them one after the other. Once all pieces are lightly golden on the bottom side turn them over and by the words of waste not want not, pour the remaining egg mixture around the fish. Make sure that the eggs do not go on top of the fish but around it. Sauté for another 3-4 minutes, transfer to a plate and serve. Our recommendation would be the sautéed potatoes.
