INGREDIENTS

Makes 3-4 Servings

1 (3-4 pound) boneless pork loin

1 tablespoon salt

2 tablespoons good olive oil

4 big cloves of garlic – minced

2 teaspoons fresh basil

2 teaspoons fresh thyme

2 teaspoons fresh rosemary

This recipe is absolutely wonderful. I personally prefer it on a bed of mashed potatoes with a salad and young red wine. You can always use dried herbs just use half the amount. This is also my go to recipe for a quick dinner if I have a busy day ahead, or for a lazy Sunday afternoon. I normally marinate the meat first thing in the morning to be cooked for dinner. This way the meat really takes in all the flavors. You can also skip the marinating time and put the meat straight into the oven after rubbing with the mixture.

INSTRUCTIONS

Prep time: 10 minutes  |  Cook time: 1 hour

Combine the salt, olive oil, garlic, thyme, basil, and rosemary in a small bowl. With your fingers, massage the herb mixture into the pork loin thoroughly. Cover with plastic and let marinate for at least 4 hours. You do not have to marinate for so long, it can be 20 minutes.  The longer you marinate the more flavor the meat will develop.

Preheat oven to 400 degrees F

In a 9 inch oven safe skillet sauté the pork on each side. Roast for an hour. Test using an instant meat thermometer, the temperature you’re looking for is 155 to 165 degrees. Once done, take meat out of the oven, cover with tin foil and allow it to rest for at least 20 minutes. This will allow the meat to absorb all the juices and continue cooking for a few minutes.
