INGREDIENTS

Makes 4-6 Servings

4 tomatoes sliced into rounds

1 Shallot minced

2 Garlic cloves minced

2 tb Olive Oil

Salt

Pepper

2 slices of bread diced into ½ inch cubes

½ cup Parmesan

INSTRUCTIONS

There are very few ingredients in a tomato gratin so it is absolutely imperative that you use good ingredients.  We prefer to use heirloom tomatoes when we can get them.  The more flavor the better!

Preheat oven to 375F degrees.

In a medium skillet preheat 1 tablespoons olive oil over medium heat. Cook the shallots until translucent, about 4-5 minutes or so and add the garlic. Cook the garlic and shallots for another minute.

Using an oven safe dish pour 1 tb of olive oil and arrange a layer of tomato slices and sprinkle with 1/4 tspn salt and pepper.   Top with bread and shallots mixture and sprinkle some Parmesan on top of the bread.

Bake on the middle rack for 40 minutes until the tomatoes are bubbly and the top layer of bread has dried into croutons. Let cool for 10-15 minutes and enjoy.
