INGREDIENTS

Makes 4 Servings

Glaze
2/3 cup apricot preserves

½ cup whole-grain mustard

¼ cup virgin olive oil

3 tablespoons minced fresh thyme leaves

6 garlic cloves

Lamb
2 racks of lamb – approximately 2 lbs each.

2 teaspoons kosher salt

1 ½ teaspoons freshly ground black pepper

If you want lamb decadence this is your recipe. Easy to make, quick to grill and absolutely delicious. This recipe serves 4.

INSTRUCTIONS

Prep time: 30 minutes  |  Cook time: 25 minutes

Wash and pat dry the lamb. Season with salt and pepper. In a medium sized bowl whisk together the glaze ingredients. Set aside about 1/3 of the glaze. Rub the remaining glaze on the lamb. Let the meat marinate for about 20-30 minutes.

Pre-heat grill to medium heat – 350°- 450°

Grill lamb over direct medium heat, bone side down first, with the lid closed. 20 minutes for medium rare, turning occasionally and avoid flare ups or the glaze will burn. Remove to a plate, brush with glaze, cover with aluminum foil and let rest for about 5 minutes.
