INGREDIENTS

Makes 3-4 Servings

1 medium sized tomato sliced into half circles

1 jar of pimento peppers diced

10 -15 kalamata olives halved

1.25 lbs cod cut into individual portions

½ tspn salt

¼ tspn pepper

1 tb olive oil

Chives or parsley (optional)

INSTRUCTIONS

Prep time: 10 minutes  |  Cook time: 15 minutes

Preheat oven to 425F degrees.

This is by far one of the easiest recipes I have ever made.  Load everything up and let it bake meanwhile you pour yourself a glass of wine.

In a square oven safe dish layer tomatoes, peppers, olives, and sprinkle with salt. Pat the cod pieces dry with a paper towel and arrange on top of the tomatoes. Sprinkle with salt, pepper and some olive oil.

Bake for 15-18 minutes until the fish is flaky and registers 145F degrees on the thermometer. Cover with aluminum foil for 5 minutes. Sprinkle with chives or parsley and serve.
