INGREDIENTS

Makes 3-4 Servings

2 boneless chicken breasts large diced

1 medium size yellow onion

1 red or green pepper

1 garlic clove minced

1 tspn kosher salt

½ tspn freshly ground pepper

2 eggs

1 tb mayonnaise

1 ½ tb flour

4 tb olive oil

4 or 5 green onions

INSTRUCTIONS 

In the food processor with a metal knife attachment process chicken into little pieces making sure not to over process and set aside. In the same blender, mince onions, then green or red pepper all separately. Over medium low heat, heat 2 tablespoons olive oil and cook onions until translucent for about 5 minutes. Add garlic and cook for another minute or so.

Using a medium sized bowl add onions and garlic, green or red peppers, salt, pepper, eggs, mayonnaise, and flour to the chicken and mix very well together. Refrigerate for 30 minutes.

In a medium size pan heat 2 tablespoons of olive oil over medium heat. Using two spoons, spoon the chicken mixture making little pancakes. Cook for 3 minutes on each side. Sprinkle with chopped green onions and serve immediately.
