6 chicken tenders
Salad greens
1 tomato
1 cucumber
Feta cheese
Canola oil
Salt
Pepper
Lemon juice
INSTRUCTIONS
Prep time: 5 minutes | Cook time: 15 minutes
In a 9 inch skillet over medium heat preheat 1tb of oil. Make sure to use an oil like avocado or canola oil that has a high flash point. Olive oil does not have a high flash point and should be used as finishing oil.
Sauté the chicken tenders until golden on each side, approximately 5 minutes per side. Salt and pepper once the sides are golden. Set aside for 5 minutes.
Meanwhile the chicken is cooking, assemble the salad in the middle of the plate. Cut chicken tenders to bite size pieces and place on top of the salad. Top with a sprinkling of salt and squeeze some lemon juice to top off.
