This chicken can be made in a few ways. The best way, is to prep the chicken the night before and refrigerate. The next day put it in the oven and dinner is ready.
Makes 4 Servings
1 5-6 lb chicken
5-6 Garlic cloves
1 lemon quartered
5-6 sprigs of thyme
Olive oil
1 tspn salt
½ tspn pepper
Optional
3 carrots peeled and cut into large chunks
1 onion peeled and quartered
3-4 medium sized potatoes peeled and halved.
