INGREDIENTS

Makes 3-4 Servings

2 tb olive oil

1 medium sized yellow onion minced

2 garlic cloves minced

1 green or red bell pepper diced

2 medium tomatoes diced

3 oz. cooked polish sausage sliced

6 oz. crushed tomatoes

¼ cup white wine

2 tspn kosher salt

¼ tspn pepper

¼ tspn red pepper flakes

4 oz. good feta cubed

4-6 eggs (depending on amount of servings)

INSTRUCTIONS

Prep time: 10 minutes  |  Cook time: 30 minutes

In a large sauté pan preheat the olive oil over medium heat and sauté the onions for approximately 5 minutes. Add garlic and sauté for another minute. Add sweet pepper and cook for approximately 10 minutes until soft. Add tomatoes, sausage and continue cooking for another 4-5 minutes.

Add crushed tomatoes, white wine, salt, pepper, pepper flakes, cover with a lid and let simmer over low heat for 10 minutes. Uncover and cook down over medium low heat stirring for another minute or so until the liquid has reduced by about 25%.

Put each egg into an individual little bowl for easier addition to the mixture. This is optional but allows the eggs to cook at the same time. Add one egg at a time in the mixture, careful not to mix it. Add feta around the eggs, cover and let cook for another 3-6 minutes depending on how well you like your eggs.

Serve with favorite bread and a nice glass of wine.
