Makes 3-4 Servings
For the Filling
12 oz. fresh or frozen berries
2 tablespoons granulated sugar
For the Crust Topping
¼ cup all purpose flour
¼ cup granulated sugar
¼ cup light brown sugar
1/8 or less tspn salt
4 tablespoons or 1/2 stick unsalted butter, diced plus extra for ramekins
INSTRUCTIONS
Prep time: 10 minutes | Cook time: 1 hour
Preheat oven to 350°F.
Butter 4 ramekins. Combine berries and sugar and distribute the mixture evenly among the ramekins.
For the topping, in a food processor with a steel blade, combine flour, sugars, salt and butter. Pulse until butter is about the size of peas. You should have a very crumbly texture. Sprinkle topping on the berries and place ramekins on a baking pan.
Bake on the middle rack in the oven at 350°F for 1 hour. Serve at room temperature.
NOTE: This recipe may be prepared a day or two in advance. Simply prep the ramekins up until baking point, cover with plastic wrap and freeze until desired usage. Then unwrap and bake as per directions.
