Makes 3 Servings

3 trout fillets

1 lemon sliced into rounds

1 orange cut in half and sliced

½ tspn salt

¼ tspn pepper

1 tb olive oil

Chives or parsley (optional)


Prep time: 10 minutes  |  Cook time: 12 minutes

Preheat grill to 400F. Salt and pepper the trout outside and inside. Place lemon and orange slices inside the cavity and fold to make a whole fish. Oil the outside of the fish and using a brush, brush olive oil on the fish grill basket. Grill 8 minutes on one side and 4 on the other on indirect heat until the fish is juicy and meat is white and translucent. Sprinkle with extra lemon and orange juices and top with chives or parsley.

Serve with favorite potatoes or fresh vegetables and a nice glass of Sancerre wine.
