Makes 3-4 Servings

2 lbs asparagus
1 tspn kosher salt
½ tspn freshly ground pepper
1 garlic clove minced
*Optional – ¼ cup Parmesan cheese

INSTRUCTIONS

Prep time: 10 minutes  |  Cook time: 22 minutes

Asparagus has never been my favorite vegetable until I learned this recipe. Use it as a side dish to steak or fish and you won’t be disappointed.



Preheat oven to 400°. Wash and pat dry the asparagus. Cut off thick portion of the stem. Put on a baking sheet and sprinkle with salt, pepper, and garlic. Sprinkle with olive oil and toss together.   Bake for 22-25 minutes on the middle rack of the oven. Half way through the baking, shake up the sheet to ensure even cooking. *Optional – approximately 5-7 minutes before the end of cooking time, sprinkle asparagus with Parmesan cheese.

Serve immediately.
