Makes 3-4 Servings

1 lb portabella or white mushrooms sliced½ sweet or yellow onion diced

¼ tspn salt

1/8 tspn pepper

1 tb olive oil

There are a lot of questions on how to clean mushrooms. There are two basic methods. Either brush off each mushroom with a paper towel or wash them. If you do wash them – make sure to wash right before cooking, so that they do not brown. Do not soak the mushrooms in the water.  Just gently submerge them and take them out of the liquid as quickly as possible.

In a 10-inch non-stick skillet, preheat 1 tablespoon of olive oil over medium-low heat. Sauté mushrooms and onions together. The mushrooms will first release their moisture and then they will brown. Once all the moisture is gone and the mushrooms are browned in a golden color, serve immediately.
